Preheat oven to 350 degrees F.
Mix ingredients. In a medium bowl, combine peanut butter, egg, baking soda, cane sugar and vanilla. Using a hand mixer or whisk, mix all the ingredients really well until all combined. The dough will be thick and sticky. Shape cookies. Scoop about 1 tablespoon of the dough mixture (I like to use this small cookie scoop) and roll into a balls. Place them on a prepared baking sheet lined with parchment paper, leaving space between each cookie. Use a fork to gently press a crisscross pattern into each ball, slightly flattening them. I also like to smooth up the edges with my finger. Bake. Place the cookies in the oven and bake for 10 to 13 minutes, or until edges are set and centers are still soft. The cookies will continue to firm up as they cool.
Cool and enjoy. Let the them cool on the cookie sheet for about 5 minutes, then carefully transfer them to a wire rack to cool completely.
