- 1 Tbsp olive oil
- 1 lb lean ground beef
- 1 onion finely chopped
- 8 oz baby bella mushrooms minced
- 3 cloves garlic minced
- 2 Tbsp all-purpose flour
- 2 cups low-sodium beef broth
- 1 Tbsp Better than Bouillon beef base
- 1 Tbsp Worcestershire sauce
- 2 tsp fresh thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup full-fat plain Greek yogurt (can substitute sour cream or heavy cream)
- 12 oz package wide egg noodles
- Garnish with finely chopped parsley and cracked black pepper
Fill a large pot with water and bring it to a boil on the stove. While the water is coming to a boil, add the ground beef to a large skillet and cook until browned and crumbled. Transfer the cooked ground beef to a plate and keep the heat on the skillet. In the same skillet you used to brown the meat, drizzle a little olive oil and sauté the onions, garlic and mushrooms until onions are translucent and mushrooms are cooked down, about 7 more minutes.
Add in the cooked ground beef and sprinkle with the flour, stirring until fully incorporated, mixing any lumps that form. Add in the beef broth, Better than Bouillon, Worcestershire sauce, fresh thyme and season with salt and pepper. Mix well and bring to a boil. Once sauce starts to boil, turn the heat to low and let the sauce simmer for 4 to 5 minutes, until the sauce thickens slightly. While the sauce simmers, add the egg noodles to the boiling water and boil per the package instructions. Once the sauce has thickened, turn the heat off and mix in the Greek yogurt. Stir to combine everything and season to taste, if needed. Serve over egg noodles, garnish with fresh parsley and enjoy!
