- 2 Tbsp olive oil divided
- 1 lb flank steak, cut into thin bite-sized strips
- Salt and pepper, to taste
- 1 Tbsp minced garlic
- 1 tsp fresh ginger, grated
- 1 large head of broccoli, cut into florets (about 3 cups)
- 1/4 cup chopped green onions
- Garnish with sesame seeds, if desired
Prepare the sauce. In a bowl, whisk together the soy sauce, beef broth, honey, sesame oil and red pepper flakes. In a separate smaller bowl, mix together the cornstarch and cold water to make a slurry and add to the stir fry sauce. Set aside.
Cook the meat. In a large skillet or wok over high heat, drizzle a tablespoon of olive oil. Add the beef strips in a single layer and season with salt and pepper. Sauté the beef for 3 minutes on each side until just cooked through. Transfer to a plate and set aside. Sauté the broccoli. Turn the heat down to medium and drizzle the remaining tablespoon of olive oil in the skillet. Add in the broccoli florets, garlic and ginger and sauté for 4 to 5 minutes, partially covered with a lid, until broccoli are slightly tender, but still crisp.
Toss everything together. Add the steak back to the pan and pour in the prepared stir fry sauce. Reduce the heat to medium-low and simmer for 3 to 4 minutes, until the sauce has slightly thickened. Turn off the heat and stir in the green onions.
Serve. We love serving this beef and broccoli over rice, but you could also serve with cauliflower rice, noodles or enjoy this all on its own!
