Chicken Cobb Salad

Ingredients

  • 2 heads of romaine lettuce chopped
  • 2 cooked chicken breasts cut into cubes
  • 1 pint grape tomatoes halved
  • 4 hard-boiled eggs quartered
  • 1 avocado diced
  • 6 slices of bacon cooked and crumbled
  • 1/2 cup crumbled blue cheese
  • 2 Tbsp chives chopped

For the Red Wine Vinaigrette:

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 Tbsp Dijon mustard
  • 2 tsp honey
  • 2 cloves garlic minced
  • 2 Tbsp finely chopped shallots
  • 1 tsp dried oregano
  • 1/4 tsp each salt + pepper

Instructions

  • Transfer the chopped romaine lettuce on a large platter or bowl. Arrange the diced chicken, grape tomatoes, hard-boiled eggs, avocado, crumbled bacon and blue cheese on top of the lettuce. Sprinkle with chopped chives.
  • To make the dressing, combine all the ingredients in a medium jar with a tight-fitting lid and shake vigorously to emulsify.
  • Drizzle the red wine vinaigrette evenly over the salad just before serving and gently toss the salad to combine. Serve immediately and enjoy!
