Chicken Cobb Salad

- 2 heads of romaine lettuce chopped
- 2 cooked chicken breasts cut into cubes
- 1 pint grape tomatoes halved
- 4 hard-boiled eggs quartered
- 1 avocado diced
- 6 slices of bacon cooked and crumbled
- 1/2 cup crumbled blue cheese
- 2 Tbsp chives chopped
For the Red Wine Vinaigrette:
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 Tbsp Dijon mustard
- 2 tsp honey
- 2 cloves garlic minced
- 2 Tbsp finely chopped shallots
- 1 tsp dried oregano
- 1/4 tsp each salt + pepper
Transfer the chopped romaine lettuce on a large platter or bowl. Arrange the diced chicken, grape tomatoes, hard-boiled eggs, avocado, crumbled bacon and blue cheese on top of the lettuce. Sprinkle with chopped chives.
To make the dressing, combine all the ingredients in a medium jar with a tight-fitting lid and shake vigorously to emulsify.
Drizzle the red wine vinaigrette evenly over the salad just before serving and gently toss the salad to combine. Serve immediately and enjoy!
