Delicious Stuffed Veggie Pizza Rolls made with pizza dough and loaded with fresh veggies and mozzarella cheese. They also get brushed with garlic butter and sprinkled with Parmesan cheese. Dip the rolls in pizza sauce or marinara sauce!

Who says pizza has to be unhealthy?? Sure you don’t want to load yourself up on bread and cheeses everyday, but once in awhile a little splurge is okay – especially when you throw in fresh veggies and yummy seasonings! These bite-sized vegetarian pizza rolls are perfect snack for kids and make a delicious appetizer for game days and the Super Bowl! Make a huge platter and set them out when the game comes on and I can pretty much guarantee they’ll be gone before your team even makes their first touchdown.
Ingredients You’ll Need
- pizza dough – feel free to use any type of dough you’d like whether you have a homemade dough recipe or use store-bought refrigerated dough.
- veggies – we are using colorful bell peppers and red onion in these pizza rolls, but you could also add in pepperoni, sausage or olives for more traditional pizza rolls.
- marinara – you can use my homemade marinara recipe or simply use jarred pizza sauce (I love using Raos because it’s low in sugar).
- cheese – I used shredded mozzarella cheese in this and you could also add in a little parmesan cheese.
- butter – just a little bit of melted butter to brush over top of the pizza rolls giving them that gorgeous golden coloring.
- seasonings – a combination of garlic powder and Italian seasoning.
How to Make Veggie Pizza Rolls
- Prepare the dough. Preheat oven to 425 degrees F. Lightly flour your surface so the dough doesn’t stick and roll it out into a 12″ x 8″ rectangle. Cut out 24 rectangles using a pizza cutter and place a teaspoon of cheese along with the chopped veggies in the center of the squares.
- Roll up the balls. Carefully take the ends of the squares and roll them up around the fillings, pinching the ends to make a ball. Place balls of dough in a lightly sprayed pie pan or on a baking sheet and set aside.
- Bake pizza rolls. In a small bowl, whisk together the melted butter, garlic powder and Italian seasonings. Brush mixture all over the balls until coated and bake in the oven for 15 to 18 minutes, until tops are golden brown.
- Serve and enjoy! Serve with marinara or ranch dipping sauce and enjoy!

Prepping and Storage
To Store: These stuffed veggie pizza rolls will last up to 5 days stored in a sealed, airtight container or ziplock bag in the fridge. Simply reheat in the microwave when ready to heat.
To Freeze: You can store these pizza rolls in a freezer-safe ziplock bag or container for up to 3 months. Your very own mini hot pocket!
