I love making homemade dressings and this Greek salad dressing is truly one that never fails me! Easy to throw together and made with ingredients probably already sitting in your pantry. It is the perfect simple dressing to throw over a classic Greek salad, drizzle over your favorite veggies or you can even use it to marinate chicken, fish or shrimp! No need to purchase store-bought dressings loaded with preservatives when it is literally this easy to make your own dressing.

Greek salads are one of my favorites to make during the week so having this dressing on hand in my fridge is always a must.  Traditional Greek salad dressing is typically made using a mixture of extra-virgin olive oil, red wine vinegar, garlic, Dijon mustard and oregano, very similar to Italian dressings or this lemon vinaigrette.

Ingredients You’ll Need

This easy Greek salad dressing recipe requires just a few simple ingredients that you probably already have at home in your pantry or fridge!  Here’s what you’ll need:

  • olive oil – I like to use a good extra virgin olive oil that doesn’t have to be expensive, just make sure it’s cold-pressed and organic for the most flavor. You could also use avocado oil.
  • red wine vinegar – this adds a nice tangy flavor that goes perfect with the olive oil and lemon juice. You could also use white wine vinegar or apple cider vinegar.
  • lemon – I just love the bright flavor fresh lemon juice brings to this dressing.  Feel free to add a little bit of the zest too for even more lemon flavor!
  • dijon mustard – this adds a little zip and helps to emulsify the dressing.
  • garlic – I like to use fresh garlic clove in my salad dressings, but a 1/4 teaspoon of dried minced garlic or garlic powder will work if that’s all you have on hand.
  • seasonings – a combination of dried oregano, dried basil, kosher salt and black pepper – fresh oregano, fresh basil or other fresh herbs would taste amazing too.

If you wanted to add a little sweetness to this homemade dressing, feel free to drizzle in a touch of honey or maple syrup without using refined sugars.

How to Make Homemade Greek Salad Dressing

Making homemade salad dressings and vinaigrettes are literally SO dang easy and takes less than 5 minutes!  Simply whisk together (or shake!) all the ingredients in a small bowl or mason jar until fully emulsified. You could also use an immersion blender or food processor.  Then just store the dressing in a sealed, airtight container in the fridge until you are ready to use. 

How to Store

This classic Greek vinaigrette will last up to 5 days in the fridge, but definitely tastes best as fresh as possible. I also like to make my dressing a few hours ahead of time before serving so that those flavors can really marinate! If storing in the refrigerator, make sure to take out the dressing and let it sit at room temperature about 30 minutes before serving so the oil has time to soften.

I personally like to store my dressings in mason jars because they have a tight-fitting lid, they are easy to take on-the-go, and you can just add all your ingredients and give the jar a good shake!

Ways to Use This Dressing

  • Dressing for salads – tastes amazing on this Greek salad recipe tossed with cucumbers, fresh tomatoes, red onion, briny kalamata olives and feta cheese. Also tastes great with Mediterranean recipes, tossed with a Greek pasta salad or other Greek food.
  • Marinade for proteins – this Greek dressing doubles as a delicious marinade for chicken, beef, shrimp or fish. Marinate for at least 30 minutes (or overnight) before grilling, roasting or baking. You could also toss with some chickpeas.
  • For drizzling – add a couple tablespoons of this dressing over grilled vegetables, juicy tomatoes, in grain bowls with brown rice or quinoa, over roasted potatoes or brush it over these Greek chicken kabobs.
  • Dipping sauce – use this Greek dressing as a dipping sauce for warm pita bread, these Mediterranean chicken meatballs, or grilled shrimp. For a thicker dip, whisk in a little greek yogurt or tahini for a creamy texture.

      You could try substituting the Dijon for a little Worcestershire sauce or just leave the mustard out altogether! 🙂
